I'd almost forgotten to post about these Mud Hen bars from Sunday Baker that I made for one of our Bachelor watch parties. Everyone loved them, they are simple to make, and you probably have all the ingredients on hand! (I omitted the nuts- personal preference). The brown sugar meringue topping is what really makes these special - it's a winner!
Ingredients
1/2 c. butter, room temp
1 c. granulated sugar
3 eggs
1-1/2 c. all-purpose flour
1 t. baking powder
1/4 t. salt
1 c. nuts chopped
1/2 c. semi-sweet chocolate chips
1 c. marshmallows
1 c. brown sugar
Directions:
Beat together sugar and butter until creamy. Beat in 1 whole egg and 2 egg yolks (put aside the whites for later). In a seperate bowl, mix together the flour, salt and baking powder. Add to the butter mixture and mix well. Spread into 9x13" pan. Sprinkle with marshmallows, nuts and chocolate chips.
Beat egg whites until stiff peaks form. Fold in the brown sugar. Spread over the mixture in pan. Bake in a preheated 350 degree oven for about 30 minutes or until bars are a deep golden brown and the crust is cooked through. Cool in pan and cut.
