Jalapeno popper sliders

Dinner tonight was jalapeno popper sliders from Rachael Ray. They taste just like a jalapeno popper on top of a hamburger. Robert raved about the cream cheese topping and asked if he could eat it with a spoon - sure, why not?? Make sure you have enough pepper slices because we liked having some in every bite. We'll definitely be making these again!!

Spicy poblano burgers (Guest Post)



Dinner last night was spicy poblano burgers from Cooking Light magazine.

Lindsay made these (with some Sous Chef help from me), but I wanted to do the post because these suckers were GOOD. The burgers were juicy and flavorful (with a little heat but not too much), and the pickled red onion was a nice topping. But the showstopper was the chipotle cream spread. It was just enough to cool down the heat of the poblano and was bursting with flavor. It was Yum. Seriously. Make it.

04.19.09 Mini burgers

Dinner tonight was a Coon family favorite - mini burgers, compliments of Grillmaster Robert! No official recipe for these - we use Laura's Lean ground beef, toasted buns or Hawaiian rolls, and any toppings you like. We season our meat with Burger House seasoning, which is from a Texas restaurant that my friend Kady got us addicted to, and cayenne pepper. You can make many versions of these - bacon-cheddar, Greek style with feta cheese, etc.
