Curry chicken wraps with nectarine chutney

We tried curry chicken wraps with nectarine chutney from Cooking Light this week. I'll start with Robert's quote after licking his plate: "It is like a flavor bomb went off in my mouth". In fact, I'll end there too - great Indian/Mediterranean flavors and a refreshing summer sandwich!

Chocolate revel bars

Our sweet treat for the premiere of the new Bachelorette season was chocolate revel bars from Baking Bites, a fellow food blogger. The best way to describe these is as an oatmeal-chocolate chip-cookie bar. Make that a DELICIOUS oatmeal chocolate chip cookie bar - these were a big hit with the group! I omitted the pecans because I'm not a big fan of nuts in cookies. Try them, I think you'll like them!

Burgers al pastor

Dinner last night was burgers al pastor from Mexican Made Easy. These burgers don't have many ingredients but they have a lot of flavor! (I did a mix of ground pork and ground sirloin instead of all pork - I'm a believer that anything called a burger should have some beef in it). Simple and delicious!

Cuban sandwiches


Dinner last night was cuban sandwiches from Cooking Light. I'm not really a fan of ham even though I love all other forms of pork, but it's acceptable in this sandwich because it isn't the star of the show. The stars here are the pork tenderloin, mustard sauce and pickles - these sandwiches are great!! I called several local bakeries and no one makes (or even sounded familiar with) cuban bread, so I subbed our favorite stand-in, ciabatta bread. And as usual, we replaced the swiss with provolone, a personal preference. Other than that, follow the recipe and ENJOY!!

Manicotti

Dinner last night was manicotti from the Food Network. It is a traditional recipe, but still delicious!! I used frozen spinach vs fresh, and instead of just simmering the sauce with a stem of basil in it I added it chopped at the end. Cheesy and delicious!

Paella-style fried rice

Dinner tonight was paella-style fried rice from a fellow food blogger, One Perfect Bite. I love paella but am not a seafood fan, so I loved this version with chorizo sausage (she also includes instructions for making it with shrimp). I omitted the green peas (personal preference), used brown rice, and added a healthy pinch of saffron with the other spices at the beginning. The toasted pumpkin seeds add great crunch, so don't skip them - I got mine from the bulk bins at Whole Foods, so you can buy just the amount you need. Robert and I both loved this one!!

Mozzarella, prosciutto and pesto sandwich

Dinner tonight was mozzarella, prosciutto and pesto sandwiches. These are SO easy to make, especially since I subbed store-bought pesto instead of making our own. (It is an excellent way to use more of the pesto from the chicken and pesto pizza on the previous post). I ate mine cold, but Robert grilled his like a panini. Both ways are delicious, so take your pick!

Chicken, red grape, and pesto pizza

Dinner tonight was chicken, red grape, and pesto pizza from Cooking Light. Sounds like an interesting combination, huh? Don't be skeptical - this is a delicious pizza!! I made a homemade thin crust pizza dough and baked my own chicken, then followed the recipe as is (actually, I forgot to top it with scallions but didn't realize it until we were almost finished - oops). Just trust me on this one- try it!
