01.28.09 Jambalaya
Dinner on Wednesday was Turkey and andouille sausage jambalaya from Cooking Light. It was spicy and delicious, and I have several notes to share. 1) Recipe says it serves 8, but it only served 5 of my hungry family members, 2) this was my first experience cooking with turkey breast instead of ground turkey. I bought turkey cutlets at Kroger, baked them at 375 degrees for 25 minutes, then shredded it for the recipe, 3) I used long-grain brown rice because that's what we prefer - our rice was still al dente, so I would recommend increasing the cook time or pre-cooking the rice and serving the jambalaya over it. I served steamed sugar-snap peas on the side.

01.25.09 Bombay chicken
Dinner tonight was Bombay chicken, a recipe from my Pi Phi cookbook. It's a simple recipe with few ingredients, and didn't require a trip to the grocery store for us, which I love. We used chicken tenders, so we baked ours for 30 minutes instead of 45. I served it with chicken fried rice (nothing fancy, just one of those rice packets from Lipton). The recipe is below - there were some vague parts, so I've inserted my notes in parentheses. Enjoy!
Bombay Chicken - Serves 4
8 pieces chicken (I used 6 tenders for the two of us)
Flour
Salt and pepper
3-4 teaspoons oil
4 tablespoons brown sugar
2 tablespoons soy sauce
5 teaspoons sesame seeds
1 cup dry sherry
Preheat oven to 375. Dredge chicken pieces in mixture of flour, salt and pepper. In a skillet, heat oil over medium-high heat. Brown the chicken in oil (doesn't have to be cooked through because the dish also bakes in the oven). Remove chicken and place in a casserole dish. Add remaining ingredients to skillet and cook 1 minute. Pour sauce over chicken and bake for 45 minutes (adjust to the amount and size of your chicken pieces).

Robert and I love french dip sandwiches (our favorite is from Cheers in the Heights), but this recipe is equally delicious and very simple. We put ours on ciabatta bread and use provolone cheese instead of pepper jack. Soak up the au jus and enjoy!!

Lucy's birthday brunch

Between the holidays, Robert's business trip, and an unsuccessful recipe not worth posting about, I haven't had anything to share lately. I realized I didn't post about Lucy's birthday though, so I'm doing that now. We had her party on Christmas Eve morning so it was a brunch menu. Two of my favorite recipes were the Basil-Lime Fruit Salad, and instead of birthday cake, dessert was Monkey Bread Minis. Robert is allergic to strawberries, so I substituted red grapes in the fruit salad. Also, the web version of the monkey bread recipe doesn't have the glaze instructions, so I've added them here. The magazine called this step "optional", but who doesn't want extra sugar on top?!Glaze:
Stir together 1 cup of confectioners' sugar and 2 tablespoons milk. Drizzle over the bread as it cools.
