
Dinner tonight was
paella-style fried rice from a fellow food blogger,
One Perfect Bite. I love paella but am not a seafood fan, so I loved this version with chorizo sausage (she also includes instructions for making it with shrimp). I omitted the green peas (personal preference), used brown rice, and added a healthy pinch of saffron with the other spices at the beginning. The toasted pumpkin seeds add great crunch, so don't skip them - I got mine from the bulk bins at Whole Foods, so you can buy just the amount you need. Robert and I both loved this one!!
