Tonight we're having Three cheese chicken penne florentine from Cooking Light. I halved the recipe and omitted the mushrooms (personal preference). Cheesy and delicious, perfect for a cold night!

Best pasta that doesn't have marinara! We made it exactly by the recipe and it was delish!
Tried this last night. Had to make some adjustments just based on what I had on hand. Will picked his own spinach to use from his garden (this helped make him want to eat something "with green" in it)! I didn't have a red pepper, so I threw in some peeled/diced tomatoes instead. I also added some minced garlic. I definitely think the pepper would have added a lot of flavor to this pasta dish, and I also wish I had had fresh oregano on hand to use. Awesome dish, however, as both kids ate it, too! Thanks, Lindsay!
