

Dinner tonight was
fajita chilaquiles casserole from the Rachael Ray show. I made
pico de gallo to top our casserole with (along with sour cream, of course). The spices on the chicken were a great mix of flavors, and you can't go wrong with a recipe that calls for tortilla strips and melted cheese! Leftovers would be great wrapped in a tortilla.
