Butternut squash gnocchi


Dinner last night was butternut squash gnocchi from Rachael Ray. (She used pumpkin on the show, but we can't get enough roasted butternut squash so we subbed it in). This was a delicious, rich dish. My cream sauce didn't thicken, and we were too impatient to wait, so we just ate with spoons. If you've never cooked with gnocchi before, they are dumplings (mine were potato) that cook very quickly - you'll find them in the specialty Italian section of the grocery store. The cream sauce in this dish was fantastic - and check out that mountain of parmesan cheese!
