French onion soup


Dinner last night was french onion soup with cheese croutons from the Rachael Ray show. You just can't beat the taste of caramelized onions, in my humble opinion. This is a delicious soup, perfect for a cold night. I substituted a dried bay leaf and dried thyme instead of fresh, and provolone cheese in place of gruyere. We made mini-roast beef sandwiches to dip in the soup, french-dip-style, but let's be honest- it was just an excuse to add more cheese and bread to the meal. Yum!
